The Best Banana Bread

imageI spent a lifetime trying to find the perfect Banana Bread…and after trying dozens, I knew what I wanted….it had to have sour cream, cinnamon and nutmeg, it needed bananas but not too many, and it had to have a wow factor. I took a little from different banana breads I had tried and when put together? My husband said “This is the best banana bread you have ever made” mission accomplished.

1/4 cup white sugar
1 teaspoon ground cinnamon

3/4 cup butter

3 cups white sugar

3 eggs

4-6 very ripe bananas, mashed

2 cups of sour cream

2 teaspoons vanilla extract

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

3 teaspoons baking soda

4 1/2 cups all-purpose flour

1 cup chopped walnuts or pecans (optional)

Preheat oven to 300 degrees F (150 degrees C). Grease four 7×3 inch loaf pans or two large loaf pans. Do the small ones if you want to share and big ones if you are feeling greedy. My boys can eat the two loaves in a day and a half, but they freeze well so you can put the smaller loaves in freezer bags if your house isn’t full of teenagers…LOTS of hungry teenagers. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture. Don’t skip this step, it took me 39 years to hear about this and it will make your banana bread go from ‘great’ to ‘The Best Ever’.
In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla, cinnamon and nutmeg. Mix the  salt, baking soda and flour together and then add it in. Stir in nuts if you want them in your bread.  Divide into prepared pans.
Bake for 1 hour, until a toothpick inserted in center comes out clean. It’s gonna take about ten to fifteen minutes longer if you make  the big loaf pan,  I don’t like the sharing route, but that’s the price we pay for being selfish. Let them cool, or if you have teenagers just give up and hand over the knife…they won’t wait after smelling it for the last hour.
